Beef, pork, lamb, goat, poultry & rabbit
Full BOAH or USDA inspection lets you sell retail and wholesale statewide (or nationally for USDA/Cooperative Interstate Shipment); custom-exempt processing is for the animal owner's own table only and can never be sold.
Small-scale poultry/rabbit producers can use Indiana's limited exemption (roughly up to 1,000 birds annually) but must sell product frozen at farmers markets and roadside stands, or refrigerated when sold on-farm.
Include the required “Exempt from inspection under IC 15-17-5-11” or equivalent language, plus full product labeling, on every package.
| Item | Rule | Regulator |

| Wholesale/interstate | Cooperative Interstate Shipment (CIS) program | BOAH / USDA-FSIS |
No – custom-exempt processing is strictly for your own household's consumption, and the product legally cannot be sold or donated.
Indiana's limited on-farm exemption generally covers small-scale producers (roughly up to 1,000 birds/year); larger volumes require a BOAH limited permit (1,000–20,000 birds) or full inspection.
Yes – poultry sold at a farmers market or roadside stand under the exemption must be frozen at the point of sale; on-farm sales can be refrigerated instead.
Not unless it's processed under the Cooperative Interstate Shipment program, which brings state inspection up to a level accepted for interstate commerce.
